A basic, easy vegetable and cheese quiche dish.
1 9-inch pie crust or ready pie dough
1 onion, diced
2 tablespoons butter
4 ounces mushrooms, sliced
2 bunches broccoli, cooked, drained, and chopped
1 egg
1/2 teaspoon salt
4 ounces American cheese
1 large sweet potato, cooked and mashed (optional)
Sauté onion in butter until transparent. Add mushrooms and sauté until limp. Add broccoli, egg and salt, mixing well.
Press dough into nine-inch pie plate. Fill with broccoli mixture. Cover with a layer of American cheese and top with a layer of mashed sweet potato.
Decorate with lattice-work. Bake at 350 degrees Fahrenheit for one hour.
