Brownie Sundae Cups

These are the best way to serve a scoop of ice cream for Shabbos dessert.   Yields: 15 cups

Ingredients

Brownie Sundae Cups

  • 1 box brownie mix

  • 3 eggs

  • 2/3 cup oil

  • 1 teaspoon coffee granules

  • 2 and 1/2 tablespoons hot water

Directions

Prepare the Brownie Sundae Cups

1.

Preheat oven to 350 degrees Fahrenheit.

In a bowl, mix brownie mix, eggs, and oil.

Dissolve coffee in hot water. Mix into the batter.

4.

Spray cupcake pans well with oil spray. Fill each cavity three-fourths of the way.

5.

Bake for 20 minutes or until an inserted toothpick comes out clean.

6.

While hot, press the middle of each cupcake down firmly with a tablespoon, measuring spoon, or any object that is a bit smaller than the cupcakes. Pour some chocolate chips inside and spread around once they melt.

7.

Add a scoop of ice cream into each brownie cup and top with your favorite toppings.
