Prepare the Brownie Sundae Cups
1. Preheat oven to 350 degrees Fahrenheit.
2. In a bowl, mix brownie mix, eggs, and oil.
3. Dissolve coffee in hot water. Mix into the batter.
4. Spray cupcake pans well with oil spray. Fill each cavity three-fourths of the way.
5. Bake for 20 minutes or until an inserted toothpick comes out clean.
6. While hot, press the middle of each cupcake down firmly with a tablespoon, measuring spoon, or any object that is a bit smaller than the cupcakes. Pour some chocolate chips inside and spread around once they melt.
7. Add a scoop of ice cream into each brownie cup and top with your favorite toppings.
