1 box Tuscanini Cannellini Beans, drained but not rinsed
2 tablespoons chopped red onion
a squeeze of lemon juice
2 teaspoons wine vinegar, such as Kedem White Wine Vinegar
1 tablespoon Tuscanini Extra-Virgin Olive Oil
1/2 teaspoon rosemary
1/2 teaspoon thyme
6 cherry tomatoes, sliced
salt, to taste
freshly ground pepper, to taste
fresh, cleaned parsley for garnish
Squeeze the lemon juice over the chopped onion and let it sit for a few minutes.
Combine all ingredients in a serving dish. Chill for a few hours so the flavors will blend together. Will last two to three days in the refrigerator.
