Tomato and basil are one of my favorite food pairings. You’ve seen me pair them with pasta (Whisk Issue #271) and before that with chicken (Whisk Issue #201). You can also enjoy them on a simple slice of toasted bread (even gluten-free, if desired).

Ingredients

Main ingredients

  • toast

  • store-bought pesto

  • sun-dried tomatoes, diced

  • sliced fresh mozzarella, shredded mozzarella or crumbled goat cheese

Directions

Prepare the Toast

1.

Spread store-bought pesto on toast.

2.

Top with sun-dried tomatoes and sprinkle with cheese.

Tips:

You can substitute plain tomatoes for sun-dried tomatoes. For great toast flavor, I paired this toast with Breadsmith’s seeded sunflower bread.
