Easy to dish up and (sigh!) very easy to eat. These are wonderful for a sweet table (dairy, of course!) because they are so much neater to serve than most cheesecakes are. Enjoy! 1 and 1/4 sticks butter, softened
2/3 cup brown sugar, packed
2 cups Glicks Flour
1 cup sugar
1 (8-ounce) container whipped cream cheese
2 eggs
4 tablespoons milk
2 tablespoons Gefen Lemon Juice
1 teaspoon Gefen Pure Vanilla Extract
Blend butter, brown sugar, and flour with a fork until the combination forms coarse crumbs. Reserve one and a half cups of the mixture for topping.
Pat remaining mixture into one 9- x 13-inch pan. Freeze five minutes. Bake at 350 degrees Fahrenheit for 10 minutes. Remove from oven.
Combine sugar and cream cheese. Beat in remaining ingredients until smooth.
Pour cheese filling into crust; top with reserved crumbs.
Bake 30 minutes; cool and chill before cutting.
