Chicken in Garlic Apricot Sauce



Prepare the Chicken

1. Place into a 16- by 10-inch baking pan and cover. Bake at 400 degrees Fahrenheit for one hour.
2. Spread mayonnaise onto chicken and coat with crumbs.


For fried chicken, combine one cup flour, 1/2 teaspoon salt, dash of garlic powder, dash of paprika, 1/2 cup water, three tablespoons oil, and two eggs. Dip chicken into batter. Fry in hot oil. Drain on paper towel, then continue with the recipe.

Prepare the Garlic Apricot Sauce

1. In a small pot, combine garlic, jam, and water and bring to a boil.
2. Pour over chicken pieces and reheat.
