This is the supper for those days where you need something quick that will please everyone. Also fantastic for when you’re craving homemade take-out. Yup, that’s a real thing.
Mix the chicken with the oil and spices until it’s all coated well. Wear plastic gloves to make this easier.
Heat a frying pan or grill pan over medium-high heat and add chicken. Using a wooden spoon, mix chicken occasionally, breaking up any clumps, until cooked through, about 10 minutes.
Meanwhile prepare the toppings in small bowls. When chicken is ready, everyone can prepare their own schwarmas in pitas, wraps or on a bed of lettuce.
Tips:
Chopping the chicken really small is essential, but also a bit time consuming. To save time, chop up the fresh chicken when you have some extra time and freeze it in a ziploc bag with the oil and spices, in a thin, flat layer. It will defrost in a bowl of cold water in no time at all and then all you have to do is fry it up. Dinner in 10, literally.
