Chicken Taco Bites

These are perfect for a crowd and easy to prep ahead. To avoid soggy tortillas, assemble just before serving. Thanks to Shevy G. for this idea!

Ingredients

Assembly

  • taco-flavored Scoops chips (Tostitos brand)

  • tomatoes, finely diced

  • red onion, finely diced

  • avocados, finely diced

  • jalapeño, diced (optional)

  • 3 tablespoons cilantro, chopped

Chicken bites

  • 1 and 1/2 pounds (3/4 kilograms) chicken breast, thin cut or butterflied

  • 1/2 cup salsa

  • 1/4 cup Gefen Mayonnaise

"Sour Cream" dressing

Directions

Prepare the Chicken and Dressing

1.

Cut the chicken into small bite-sized pieces.

2.

In a medium-sized bowl, mix the salsa, mayo, and salt.

3.

Toss the chicken in the salsa mixture and then in the panko crumbs.

4.

Lay on two Gefen Parchment-lined baking sheets and bake for 10 minutes.

5.

Meanwhile, mix the dressing ingredients.

To Assemble

1.

Lay out tortilla Scoops and put a piece of chicken in each one.

2.

Sprinkle with diced tomato, onion, avocado, and jalapeño.

3.

Sprinkle with cilantro, then drizzle with dressing.
