These cookies are the perfect blend; soft and chewy on the inside, and slightly crunchy on the outside. Feel free to swap out the mint chips for regular chocolate chips if you don’t like mint.
Cream oil and sugars for one minute. Add rest of the ingredients until smooth dough forms. Mix in mint chips and chocolate chips.
Using a cooking scoop or spoon, drop one-tablespoon balls onto a baking sheet, an inch apart. Bake for 10–12 minutes.
