Simple rice is transformed into an amazing light and fresh side dish just by adding some fresh cilantro, garlic, and lime juice.
1 tablespoon oil, such as Manischewitz Grapeseed Oil
2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic
1 cup rice, such as Pereg, rinsed and drained
1 tablespoon salt
1/4 teaspoon white or black pepper
1 and 3/4 cups water (or per package directions)
1 lime, juiced and zested
3/4 cup cilantro, washed and chopped finely
In a saucepan, heat oil. Add garlic and sauté for 30 seconds or until fragrant.
Add rice, salt, and pepper and toast lightly for one to two minutes.
Add water and bring to boil.
Reduce heat to a simmer and cook for 15 minutes or until water is absorbed.
Allow to rest covered for eight to 10 minutes.
Add in lime juice, zest and chopped cilantro. Mix and serve.
