Exceptionally moist fried chicken with an irresistible balance of flavor in the marinade from the lemon, lime, and orange juices and the rich beer.

Ingredients

Main ingredients

  • 2 large eggs, beaten

  • 2 tablespoons freshly squeezed lime juice

  • 3 tablespoons freshly squeezed lemon juice

  • 1/4 cup freshly squeezed orange juice

  • 1/4 cup beer

  • 1/4 cup lemon-lime soda

  • salt, to taste

  • pepper, to taste

  • 1 and 1/2 to 2 pounds chicken cutlets, cut into 1/2-inch thick strips

  • 1 and 1/2 cups Gefen Plain Breadcrumbs

  • oil, for frying

Directions

Prepare the Chicken Tenders

1.

In medium bowl whisk egg, lime juice, lemon juice, orange juice, beer, and soda. Season with salt and pepper. Add chicken and marinate in the refrigerator for two hours.

2.

Place bread crumbs in a shallow dish. Working with one strip at a time, remove chicken from marinade and dredge in bread crumbs.

3.

Heat oil in a small saucepan. When oil is hot, add chicken and fry until golden brown, about two minutes.

Notes:

Make sure that your chicken strips are thin enough so that they will cook in two to three minutes. Over-frying will cause your chicken tenders to lose their citrusy taste.
