Creamed Cauliflower and Chicken Soup

Simple, uncomplicated, and oh, so delicious.

Ingredients

Creamed Cauliflower and Chicken Soup

  • 1 and 3/4 teaspoons salt

  • 1/4 teaspoon black pepper

  • 6 cups water

  • 2 chicken legs or 5 chicken wings

Directions

1.

In a pot, heat oil and sauté onion and potato for five minutes. Add cauliflower and sauté for 15 minutes.

2.

Stir in garlic, basil, salt, pepper, and water. Add chicken.

3.

Bring to a boil, then simmer for an hour and a half.

4.

Remove chicken from soup and pull apart. Return to pot and blend with an immersion blender for one minute.
