Store-bought hummus just won’t cut it once you start making your own. I love the Rosh Hashanah-inspired addition of sweet leeks here.

Directions

Prepare the Hummus

  1. Place chickpeas, garlic, lemon zest and juice, tahini, salt and falafel spice in a high-powered blender and mix.

  2. Add ice water as you blend. This helps break down the chickpeas and will create a lighter, smoother hummus. Add water according to preference.

  3. As it continues blending, drizzle slowly with olive oil. Let the blender keep going until you have a velvety, creamy consistency, roughly five to 10 minutes.

Prepare the Sauteed Leeks

  1. Heat olive oil in a pan. Add sliced leek and saute until soft and translucent.

  2. Add ginger and salt and saute for another five minutes.

  3. Add honey and saute for two more minutes until combined.

Notes:
It’s the same leek topping for soup; I love when you can cook once and use twice.
