Diets An Asian-inspired salad with cherry tomatoes, avocado, a tangy vinaigrette, and crispy fried wonton strips.
oil, for frying
4 sheets Gefen Wonton Wrappers, cut into 1/4-inch strips
1 (8-ounce) bag Romaine lettuce
1 pint cherry tomatoes, sliced
1 red onion, sliced
1 avocado, sliced
1/4 cup toasted sesame seeds
1/2 cup sliced almonds, toasted
1/4 cup rice vinegar
1/2 cup sugar
2 cloves garlic, crushed or 2 cubes Gefen Frozen Garlic
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup Gefen Olive Oil
Heat oil in a medium pot. Add wonton strips and deep fry for 30 seconds, until golden brown. Remove from oil and place on a paper towel-lined plate. Set aside.
In a large bowl, combine lettuce, tomatoes, onion, and avocado.
Prepare the dressing. In a small bowl, whisk together vinegar, sugar, garlic, salt and pepper. Drizzle in olive oil.
Toss salad with dressing (you will not need all of it) and sprinkle with sesame seeds and almonds. Top with wonton strips.
