1 package Manischewitz Lentil Soup
1 (17-ounce) container Manischewitz Vegetable Broth
1 onion, diced
2 stalks celery, diced
2 carrots, diced
1 large sweet potato, cut into small chunks
14 and 1/2 ounces Tuscanini Diced Tomatoes
water, as needed, to cover
1 cup fresh spinach
Combine all the ingredients except for the spinach in the slow cooker. Cook on low for eight hours or high for six.
Add the spinach in and mix well just before serving to wilt.
