Ingredients

Sweet Potato Lentil Soup

  • 1 large sweet potato, cut into small chunks

  • 14 and 1/2 ounces Tuscanini Diced Tomatoes

  • water, as needed, to cover

  • 1 cup fresh spinach

Directions

Prepare the Sweet Potato Lentil Soup

1.

Combine all the ingredients except for the spinach in the slow cooker. Cook on low for eight hours or high for six.

2.

Add the spinach in and mix well just before serving to wilt.
