1-and-1/2-pound side of salmon
3 tablespoons honey
4 teaspoons Dijon mustard
2 tablespoons Gefen Olive Oil
1 tablespoon soy sauce
3/4 of a bag of Heaven and Earth Vegetable Medley Chips, crushed
2 scallions, sliced
Preheat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper. Place the salmon on the baking sheet.
In a small mixing bowl, combine honey, mustard, olive oil, and soy sauce. Mix together and brush all over the salmon, including under.
Generously top with crushed vegetable chips and chopped scallions.
Bake for 18 minutes.
Enjoy hot straight out of the oven!

I added black pepper and left out the crunchies because they don’t sell them in Israel. Delicious 😋!
