3 cloves garlic, peeled
juice of 2 limes/lemons
1/2 cup Baracke Tahini
2 teaspoons salt
1 teaspoon black pepper
1/2 – 1 cup cool water
In a blender or food processor, blend garlic with lime juice.
Add tahini, salt and pepper. Blend again until everything is combined.
Depending on how thick or thin you want your techina to be, while blender is on, slowly drizzle in water until you reach your desired consistency. (You may need to adjust seasoning, so taste!)
Refrigerate until serving.

which tahini? what is the difference between whole tahini and sesame tahini? and which one is for the recipe?
Tahini (Tachina in Hebrew) is a paste made from sesame seeds. Whole tahini is like whole rice. You can use either in the recipe. Prepared tahini freezes very well. It lasts about a week or two in the fridge. The basic paste unprepared last longer in the fridge. I make large amounts and freeze in small containers. I take out as much as I need. Once defrosted, you need to stir it and sometimes it need a little water, but it is the same as freshly made.
Advance How much in advance can you make Techina? Does it stay fresh?
Techina can be frozen. I do it all of the time. Make containers with the amount you want and take it out the day you want to use it. It can last for about a week if your fridge is good, but check it before using it.
