These little sweet nuggets are a perfect snack when craving chocolate (which is best avoided while treating GERD).
25 hazelnuts (can sub 20 almonds, or 1/3 cup pumpkin seeds)
3 tablespoons natural peanut butter (can sub almond butter or other nut butter)
1/4 teaspoon vanilla extract
1 pinch salt
3 tablespoons unsweetened shredded coconut
20 dates (Deglet Noor)
In a small blender or food processor, add hazelnuts and dates. Pulse about 10 times until the nuts are chopped and the dates are mashed. Add the nut butter, vanilla and salt, and pulse a few more times.
Prepare the coconut flakes in a small bowl. Turn out the date nut mixture into a bowl and, with clean hands, mix well and form into small teaspoon-sized balls.
Roll each in coconut flakes amd store in an airtight container in the fridge for up to a week.
