This soup is also a great choice to serve before or after a fast. The vegetables, beans, basil, garlic, and a drizzle of olive oil give you lots of nutrients, fiber, and healthy fats. You can also make it in the crockpot and come home to a pot of ready-to-eat hot soup, what could be better than that?1/2 cup diced carrots
1/2 cup diced parsnips
1/2 cup diced zucchini
1 cup butternut squash cubes
1 can diced tomatoes
1 can chickpeas
1 can white beans
3 Gefen frozen garlic cubes
3 Gefen frozen basil cubes
salt, to taste
olive oil, to taste
Boil a large pot of water. Add a little salt and olive oil.
Add chopped soup veggies and butternut squash cubes. Add canned diced tomatoes, canned chick peas, canned white beans. Near the end add frozen garlic and basil cubes.
Simmer for about 45 minutes.
