Diets Easy and flavorful with a short ingredient list! What more can you ask for?
2 pounds boneless chicken thighs
1 tablespoon garam masala spice mix (can easily sub 1/2 tablespoon curry powder + 1/4 teaspoon Pereg Allspice)
1 can coconut milk
1 mango, diced
1 red onion, diced
1 red pepper, diced
Gefen Salt, to taste
Pereg Pepper, to taste
Mix together coconut milk and spice mix. Add chicken and marinate at least an hour or overnight. Remove chicken from marinade and grill or broil about four minutes on each side until done.
For mango relish, combine mango, onion and red pepper. Season with salt and pepper to taste. Serve with chicken.
