My grandmother put together this recipe, and it was so delicious, I didn’t believe it was as simple as she said it was.

Ingredients

Easy Vegetable Kugel

  • 1 (24-ounce) package frozen California Blend vegetables

  • 1 sleeve Ritz-style crackers (3.7 ounces), crushed

  • 3/4 cup Gefen Mayonnaise

  • 3 eggs

Directions

Prepare the Easy Vegetable Kugel

1.

Defrost the vegetables and microwave for about three minutes.

2.

In a large bowl, mash vegetables until chunky but small.

3.

Add the rest of the ingredients and mix.

4.

Bake uncovered at 400 degrees Fahrenheit for 40 minutes.

I’ve never tried this recipe so I’m not sure but I’d be a little nervous to freeze it.
