Diets 1 cup quick-cooking oats
1/2 cup unsweetened wheat germ
1 tablespoon plus 1 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
1 tablespoon Gefen Honey
1 tablespoon Gefen Pure Maple Syrup (you can substitute with honey)
2 tablespoons canola oil
1 cup soy milk
1 cup water
Preheat the oven to 375 degrees Fahrenheit.
In a large bowl, combine all ingredients. It will form a very thick batter.
Spoon into greased muffin tins until three quarters full, or into a greased loaf pan.
Bake muffins for 20 minutes or bread for 45 minutes. You’ll know it’s done if it sounds hollow when tapped lightly. Enjoy with jam, butter, any other spread, or on its own.
Yield: 16 muffins or 1 small loaf
