If you’re looking for something delicious, new, and different for your family to call a favorite, this one is for you! This sandwich has got all the components of a satisfying meal and is so simple to prepare!
3 tablespoons oil, such as Gefen Canola Oil
1 small onion, sliced
1 plum tomato, diced
1 and 1/2-2 cups deli pastrami, diced
6 eggs
Haddar Salt, to taste
6 slices bread (gluten-free, if needed)
1 small red onion, sliced
Sauté onion in oil until translucent. Add tomato and cook for approximately two minutes over a medium flame. Add pastrami and cook an additional two minutes.
Whisk eggs with salt. Add to skillet and scramble until eggs are cooked.
Toast bread, if desired. Top with eggs and pastrami mixture and red onions.
