Sometimes you just need a recipe that you can quickly throw together. This recipe is quick to make, delicious, and super filling.
1 lb ground beef
1 packet taco seasoning
1 can jalapeño refried beans
1 can corn
1 bell pepper diced
1 can black beans
3 large flour tortillas
In a frying pan over medium high heat, brown the meat. When fully cooked, add the taco seasoning and set aside.
Spray a springform pan with cooking spray. Lay a tortilla on the bottom. Top with some refried beans, corn, black beans, and diced pepper. Then top with about half the meat. Place another tortilla on top of that and cover with the other half of refried beans, corn, beans, diced peppers and meat. Top with the 3rd tortilla. Cover with foil and cook in the oven at 350F for 25 minutes, and then uncover and cook for 10 minutes until the top tortilla gets crisp.
Serve in pie slices.
