Diets Everyone can use an easy stovetop dinner for those hectic days when you have no time to think but still want to eat well. Here’s one that doesn’t need to be babysat and involves minimal cleanup – better yet, can help use up leftover fish from Shabbos. Serve along with a side of quinoa and you’re good to go.
1 medium onion, diced
3 tablespoons oil
1 pepper, chopped
1 tomato, chopped
3 slices white fish, fillet or 6 slices Ungar’s Gefilte Fish
Sauté onions in oil until transparent, add pepper and tomato.
Cover and cook over low heat for 15 minutes or until tender.
Add fish and cook for 45 minutes or until done.
Serve hot.
