A classy way to serve your leftover Shabbos dips on Sunday. Delicious, fresh, and fluffy.
Yield: 12 laffas
8 cups Glicks Flour
2 and 1/4 tablespoons Gefen Yeast
2 tablespoons sugar
2 teaspoons salt
1/4 cup Gefen Olive Oil
3 cups warm water
oil spray
In a mixer, mix dry ingredients.
Add olive oil and water and mix until combined.
Knead for 10 minutes.
Spray a surface with oil spray. Place dough on the surface and cover. Allow to rise for one hour.
Form dough into 12 balls. Place on a greased surface and cover for 10 minutes.
Using your hands and then a rolling pin, flatten dough balls into 10-inch circles.
Fry on both sides until brown spots appear.

I make these all the time, very similar recipe, with baking powder instead of yeast and a minimum 10 minutes rise time, and just a little kneading. Looks like the picture.
When frying, I have found it works better to use a spray instead of oil.
Can these be baked?
Yes! Mirel says they can be baked in the oven on a pizza stone or even using an inverted baking sheet.
