Ratatouille is a delicious traditional French dish that uses lots of fresh produce to create a healthy and yummy hot veggie stew. This rustic vegetarian dish is bursting with flavor and is sure to become a family favorite.
3 large onions, diced
3 tablespoons oil
1 medium eggplant, peeled and cubed
2 small zucchini, unpeeled and sliced
2 carrots, sliced
1 red pepper, cut into strips
1 green pepper, cut into strips
1/2 pound mushrooms, diced
1/2 pound string beans, cut in half
1 tomato, diced
8 ounces Gefen Tomato Sauce
1/2 teaspoon salt
dash of pepper
1 tablespoon sugar
Sauté onions in oil until transparent.
Add all vegetables and sauté for 30 to 40 minutes, stirring frequently, adding small amounts of water if necessary.
Add tomato sauce and spices and cook for additional 10 to 15 minutes. Serve hot or cold.
Will keep fresh for four to five days in the refrigerator. Delicious when served over hot rice, as a side dish or entreé.
