Diets Fried ripe plantains are a simulanously sweet and crispy side dish ubiquitously eaten across the Caribbean. Plantains belong to the banana family, but they are starchy and can’t be eaten raw. Learn how to prepare fried plantains with the help of Jenny’s tips on Sunny Side Up.
2 yellow/brownish plantains, sliced on a bias (The browner the better. Watch the show to learn how to peel a plantain!)
oil for frying
Haddar Kosher Salt, for finishing
Add one-fourth inch oil to a frying pan and heat.
Add sliced plantains to the hot oil and fry for about a minute and a half on each side till golden. Remove to drain on paper-towel-lined plate.
Serve with picadillo, black beans, and white rice.
