I’ll eat my greens, but keep my eyes on the prize. When it comes to dessert, I want a sweet treat to balance the savory meal. This fruit-and-cream layered parfait is refreshing, luscious and unique. It has been wickedly spiked with—ho ho hum—just a bit of rum and caramelized to perfection. Have we really eaten if we haven’t had dessert?
1 cup heavy cream, chilled
1 and 1/2 cups + 2 tablespoons sugar, divided
1 teaspoon Gefen Vanilla Extract
small pinch of Haddar Kosher Salt
1 pineapple, cubed
2 tablespoons rum
Whip heavy cream, two tablespoons sugar, vanilla and salt with a hand mixer.
Heat remaining one and a half cups sugar in a small saucepan until melted and browned. Add pineapple and rum, stirring constantly so it doesn’t harden.
To serve, layer whipped cream, pineapple, and then another layer of whipped cream and pineapple. If not serving immediately, refrigerate caramelized pineapple so it doesn’t harden.
