This quick and easy chocolate treat makes a great gift or dessert. Feel free to substitute toppings of your choice.
8 ounces good semisweet chocolate, finely chopped
8 ounces good bittersweet coating chocolate, finely chopped
1 cup whole roasted, salted cashews
1 cup chopped dried apricots
1/2 cup Gefen Dried Cranberries
1 cup chopped pecans
12 graham crackers, broken into small pieces, and 8 ounces Elyon Mini Marshmallows
1 cup shredded sweetened coconut
Melt the two chocolates in a double boiler or a heatproof bowl set over a pan of simmering water.
Prepare five or six three-ounce bar molds.
Pour the melted chocolate into the molds and tap mold on the countertop to settle chocolate.
Sprinkle the cashews, apricots and cranberries over the chocolate. Set aside for 30 minutes until firm. Gently pop bars out of the mold.
