Ginger, mustard, and apricot … wow! A winning combination on this fish.
4 (1-inch) fillets salmon
oil spray
1/2 cup Tuscanini Apricot Fruit Spread
1 and 1/2 tablespoons lime juice
1 tablespoon dijon mustard
1 and 1/2 teaspoon Pereg Ground Ginger
1 teaspoon minced garlic
1 teaspoon Glicks Soy Sauce
1/4 teaspoon salt
1/4 teaspoon black pepper
Preheat oven to 425 degrees Fahrenheit. Spray 9 x 13-inch pan with oil spray and place fillets in pan.
Combine rest of ingredients and pour over fillets.
Bake at 425 degrees Fahrenheit for 15 minutes or until fish flakes easily with a fork.

This was delicious, simple to make and a nice twist to regular salmon Definately a keeper
