Greek Cauliflower Salad


Enjoy this delicious salad alone or over greens.


Prepare the Greek Cauliflower Salad

1. Combine the lemon juice, oregano, and garlic in the bottom of a mixing bowl. Season with salt substitute and pepper to taste.
2. Add the tomato, red pepper, green pepper, onion, olives, and cauliflower rice.
3. Toss and mix well to combine with the dressing. Adjust seasonings to taste.
4. Serve over mixed greens or enjoy on its own.



Storage: Refrigerate in an airtight container.



Additional add-ins: diced cucumber, avocado chunks, red pepper flakes, and/or fresh herbs. Year-round, chickpeas or lentils can be added.


Salt Substitutes: Use white miso paste, liquid aminos, Mrs. Dash, or other healthy salt alternatives.
