The key ingredients here are lettuce, avocado, candied nuts, and fruit, so feel free to use whatever fruit you have on hand.
1 head romaine lettuce, shredded
1 avocado, peeled and cubed
1 star fruit, sliced
handful of candied almonds (see procedure for making your own, below)
1/2 cup canola oil
1/4 cup Kedem Red Wine Vinegar
1/4 teaspoon mustard powder
1/8 teaspoon pepper
1/8 teaspoon salt
2 tablespoons sugar
Arrange lettuce, avocado, fruit, and nuts in a large salad bowl. Combine dressing ingredients and pour over salad immediately before serving.
Place half a cup of sugar and three and a half ounces (100 grams) of almonds in a large, dry frying pan over medium heat. Do not spray the pan with cooking spray! Stir constantly until the sugar is caramelized and almonds are evenly coated, about six minutes. Transfer to parchment paper and allow to cool.
