Avrumi and Perli Halpern from Manchester (both photographer friends) told us: “Bone marrow on the grill is one dish that has become an absolute must-have at every barbecue we host. The rich, buttery marrow creates an explosion of flavor that leaves everyone craving more.” We added a light and refreshing herb salad to balance the depth and richness of the marrow. Serve this dish as an appetizer with grilled crostini, pita, or laffa, or alongside steaks for the main course.
4 large marrow bones, cut lengthwise
2 tablespoons Gefen Olive Oil
1 tablespoon coarse salt
2 teaspoons coarse black pepper
1 cup finely diced celery
1/2 cup washed and chopped parsley
1/4 cup washed and chopped fresh mint
1/2 cupchopped Gefen Dried Cherries
2 tablespoons Tuscanini Lemon Juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1 baguette, sliced
Preheat the grill to medium-high heat.
Place the marrow bones on a baking sheet, cut-side up. Drizzle with olive oil, ensuring they are evenly coated, and season with salt and pepper.
Grill for 20–25 minutes, or until the marrow is soft and starts to brown slightly.
Meanwhile, prepare the herb salad: In a bowl, mix together the celery, parsley, mint, cherries, lemon juice, salt, and pepper.
Once the marrow bones are finished, remove them from the grill and set aside to cool slightly.
Place the baguette slices on the grill and toast to your liking.
Serve the marrow bones with herb salad and toasted crostini.
