Healthier No Sugar, Sugar Cookies

Prepare the Cookies

1.

Mix together coconut oil, honey, egg, and vanilla, then add in the flour, baking powder, and salt. Add the flour slowly. You don’t want a dry dough!

2.

Roll it out onto Gefen Parchment Paper, spray with oil or sprinkle with a bit of flour. Cut out shapes, then carefully place onto baking sheet.

3.

Bake at 350 degrees Fahrenheit for 10-15 minutes. Be careful not to burn them!

4.

Let cool, then enjoy!! You can decorate after or put sprinkles on the dough before baking. Press them into the dough so they stick.

What is the carb content? Diabetics are not the only people who have to limit sugar. Could almond flour be used instead?

I would not suggest using almond flour, it gives a very different texture.

Nice recipe, but if you are diabetic you cannot use honey or maple syrup

You make a good point that many diabetics do not use high-carb sweeteners. If you’re looking for a low-carb sweetener Xylitol is a good option to try!

You can use any oil.

I don’t believe so but they will be a darker color.

Any type of neutral oil will work like canola, sunflower etc.
