Diets Everyone needs a good muffin recipe in their arsenal. I have lots of them, but they all call for cups of sugar! Here’s a wholesome muffin, perfect with a cup of coffee or as your kids’ afternoon snack. Yields 9 to 12 muffins
1 egg
1 teaspoon Gefen Vanilla Extract
1/4 cup Gefen Honey or maple syrup
3/4 cup milk or water
1/4 cup melted coconut or other oil
1 and 1/2 cups Shibolim Whole Wheat Flour
1 tablespoon baking powder
1/4 teaspoon salt
3/4 cup fresh or frozen blueberries
Preheat oven to 350 degrees Fahrenheit.
Mix egg, vanilla, honey, milk, and oil and whisk until combined. Add flour, baking powder, and salt.
Mix until combined, then fold in blueberries.
Pour into a greased muffin pan. Bake for 15 to 20 minutes.

Can I use almond or grain free flour?
I never tried. If so the amounts would be different.
Can this be made by hand? W/O an electric mixer?
Yes! You can use a fork or hand-held whisk- make sure to mix the batter until it runs smooth!
These tast so good! They almost remind me of a baked blueberry pancake.
