Healthy Blueberry Muffins

Everyone needs a good muffin recipe in their arsenal. I have lots of them, but they all call for cups of sugar! Here’s a wholesome muffin, perfect with a cup of coffee or as your kids’ afternoon snack.   Yields 9 to 12 muffins


1. Preheat oven to 350 degrees Fahrenheit.
2. Mix egg, vanilla, honey, milk, and oil and whisk until combined. Add flour, baking powder, and salt.
3. Mix until combined, then fold in blueberries.
4. Pour into a greased muffin pan. Bake for 15 to 20 minutes.
