Hearts of Palm Salad

We love this for Seudah Shlishis, but it’s good anytime.

Dressing

Start Cooking

Prepare the Salad

  1. Drain and cube hearts of palm. Peel avocado. Slice cherry tomatoes in half and dice purple onion. Combine all vegetables. 

  2. In a separate bowl, mix dressing ingredients and pour over salad. Toss gently to coat

    Loved this! Very refreshing and healthy. I used fresh dill because I don't have dried, and I used coconut sugar and apple cider vinegar to make it low-glycemic and compliant with my clean eating program. Looking forward to eating more as leftovers and would definitely make this again. Would probably be good with some toasted pine nuts/other seeds for crunch.
