This is a copycat recipe of a dish I ate at a restaurant in Italy.

Ingredients

Hearty vegetable soup

  • 1 small butternut squash, diced

  • chopped spinach

  • 1 large zucchini, diced

  • 1 box of mushrooms, sliced

  • 1 carrot, diced

  • 1 potato, diced

  • 1/2 bag frozen cauliflower

  • salt

  • 1 onion, diced

  • dried oregano

Directions

Prepare the Hearty Vegetable Soup

1.

In a pot sauté the onion until browned, add in all the vegetables, cover with water, add seasoning and bring to a boil then simmer for 1 hour.

Once the soup is ready add some sliced fresh spinach.
