Pesto Zucchini Spirals

Ingredients

Main ingredients

  • 12 ounces spiralized zucchini (from about 3 medium zucchini)

  • 2 cups fresh basil leaves

  • 1 clove garlic

  • 1/4 cup walnuts, lightly toasted

  • 1/2 cup Gefen Olive Oil

  • kosher salt, to taste

  • freshly ground Gefen Black Pepper, to taste

  • grated Parmesan cheese (optional)

Directions

Prepare the Zucchini Spirals

1.

Combine basil, garlic and walnuts in the bowl of a food processor.

2.

Season with salt and pepper to taste.

3.

With the motor running, add olive oil in a slow stream until emulsified.

4.

Prepare zucchini spirals according to directions and toss with pesto.

5.

Sprinkle with grated Parmesan cheese, if desired.

Notes:
