Zucchini Spirals are a fantastic replacement for regular pasta. Gluten-free and nutritious, they add great flavor to your dishes without the calories and carbs of pasta. Serve with a quick and easy homemade pesto for a delicious side dish.
12 ounces spiralized zucchini (from about 3 medium zucchini)
2 cups fresh basil leaves
1 clove garlic
1/4 cup walnuts, lightly toasted
1/2 cup Gefen Olive Oil
kosher salt, to taste
freshly ground Gefen Black Pepper, to taste
grated Parmesan cheese (optional)
Combine basil, garlic and walnuts in the bowl of a food processor.
Season with salt and pepper to taste.
With the motor running, add olive oil in a slow stream until emulsified.
Prepare zucchini spirals according to directions and toss with pesto.
Sprinkle with grated Parmesan cheese, if desired.
