Herb-Roasted Colorful Carrots

Roasted vegetable recipes don’t have to be complicated to be delicious. Along with Cauliflower Farfel and Pulled Sticky Date Brisket in Pan Juices, these colorful carrots are part of the perfect macro meal.

Ingredients

Main ingredients

  • 2-3 pounds (1 – 1 and 1/2 kilograms) colorful mini carrots

  • 1 tablespoon Gefen Olive Oil

  • 1 teaspoon salt

  • 1/2 teaspoon dried thyme or Italian seasoning

Directions

Prepare the Carrots

Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius). Line two baking sheets with Gefen Parchment Paper.

2.

Toss carrots with oil and spices, and divide between the two sheets. Bake for 30-45 minutes, tossing the carrots once after 15 minutes.
