Schnitzel might be basic, but this sandwich is anything but! It’s a perfect blend of crunchy, creamy, sweet, savory, and spicy, making it a delicious meal that can be served for supper or even at a party.
Yield: 6 sandwiches
1 pound chicken cutlets
1 cup Glicks Flour
salt, to taste
pepper, to taste
3 eggs
3 cups Gefen Cornflake/panko crumbs
oil, for frying
1/2 cup Gefen Honey
2 to 3 teaspoons Tonnelli Sriracha Sauce (depending on how spicy you like it)
1 bag coleslaw mix
pepper, to taste
juice of 1 lemon (2-3 tablespoons)
1/4 cup Gefen Honey
2 tablespoons vinegar
1/2 cup mayonnaise or garlic mayo
6 ciabatta rolls
barbecue potato chips
pickles
Arrange a breading station with flour, salt, and pepper in one bowl; eggs in another bowl; and crumbs in a third bowl.
Dredge cutlets first in flour, shaking off excess, then in egg and then in crumbs.
Heat oil in a frying pan over medium heat and fry cutlets for three to four minutes on each side or until golden and cooked through. Transfer to a cooling rack with parchment paper underneath.
In a small bowl, combine honey and sriracha. Drizzle on top of fried cutlets.
In a large bowl, combine all ingredients in a bowl; mix well.
Slice a roll open and add hot honey cutlets, coleslaw, chips, and pickles. Place in the toaster till toasted.
