Learn how to prepare classic Chinese vegetarian fried rice, brightened up with fried green onions, egg, and sprouts.
1 cup rice
3 tablespoons oil, divided
2 cups boiling water
3 scallions, diced
2 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup alfalfa sprouts (optional)
Toast rice in two tablespoons oil.
Pour water over rice and cook until water is absorbed.
Using non-stick pan, stir-fry scallions in one tablepsoon oil over high heat for two minutes. Add to rice and mix well.
Pour eggs into frying pan. Scramble over high heat until dry pieces form.
Add egg and seasonings to rice. Mix well.
Toast alfalfa sprouts and add to rice.
