1. Toast rice in two tablespoons oil.
2. Pour water over rice and cook until water is absorbed.
3. Using non-stick pan, stir-fry scallions in one tablepsoon oil over high heat for two minutes. Add to rice and mix well.
4. Pour eggs into frying pan. Scramble over high heat until dry pieces form.
5. Add egg and seasonings to rice. Mix well.
6. Toast alfalfa sprouts and add to rice.
