Diets A letcho plus rice all-in-one dish. This dressed-up rice dish is versatile and will please all the palates around your table. This is the perfect side dish for dinner tonight.
1 medium onion
2 tablespoons oil
1 pepper, diced
1 tomato, diced
1 cup rice
2 cups water
1/2 teaspoon salt
4 ounces Gefen Tomato Sauce (optional)
1 eggplant, peeled and cubed (optional)
1 zucchini, cubed (optional)
Sauté onion in oil until transparent.
Add pepper and tomato and sauté for 20 minutes over low heat.
Add rice.
Sauté for another five minutes, stirring constantly.
Add water, salt and tomato sauce and cook, covered, for half an hour.
