Add diced peaches into a bowl and drizzle lime juice immediately onto the peaches and mix. This prevents peaches from oxidizing and turning brown. They will stay beautifully vibrant.
Add the onion, garlic, mint leaves, cilantro, jalapeno, salt, and sugar. Mix either by hand or with a food processor. Garnish with coconut flakes if you wish.
