When we posted this recipe on Kosher Scoop, I knew it would be well-received, but its popularity surpassed my expectations. It was the number-one-viewed recipe for two weeks! Everyone loves cinnamon buns.
Makes 27 buns
5 and 3/4 cups all-purpose flour, such as Glicks
4 and 1/2 teaspoons active dry yeast
1/2 cup granulated sugar
1 and 1/2 teaspoons salt
1 cup soy milk
1 cup water
1/4 cup trans fat free margarine or oil
2 large eggs
2 cups packed Haddar Dark Brown Sugar
3/4 cup oil
3 tablespoons Gefen Cinnamon
2 tablespoons vanilla sugar
1/4 teaspoon kosher salt
2 cups Gefen Confectioners’ Sugar
3 tablespoons trans fat free margarine, melted
1 teaspoon maple syrup
1/4 teaspoon coffee granules, dissolved in 3-4 tablespoons hot water
3 cups Gefen Confectioners’ Sugar
3/4 cup cream cheese, at room temperature
1/2 cup trans fat free margarine, at room temperature
1 teaspoon vanilla
1/4 teaspoon salt
Combine two cups of the flour, the yeast, sugar, and salt in the bowl of an electric mixer fitted with the dough hook.
Heat the milk, water, and margarine in a saucepan set over medium heat (or microwave) until warm. Add to the flour mixture.
Add the eggs and the remaining flour and knead until smooth.
Cover and let rise in a warm, draft-free place for one hour.
Combine all of the filling ingredients in a bowl.
Punch down the dough and divide into three equal-size pieces.
On a lightly floured work surface, roll out each piece into a 9 x 13 inch rectangle.
Spread each rectangle with half of the filling.
Starting with the 13-inch side, roll up tightly.
Cut each roll into nine slices.
Divide buns among three eight-inch square pans, placing nine in each pan.
Cover the buns and let rise another 30 minutes.
Meanwhile, preheat the oven to 375 degrees Fahrenheit.
Bake the buns in the center of the preheated oven for 20 to 25 minutes or until golden brown.
While the buns are baking, prepare the glaze or frosting. Mix all of the ingredients for the glaze in a bowl. Drizzle over warm buns. Alternatively, place all of the frosting ingredients in a mixing bowl. Beat until well combined. Spread over the warm buns before serving.

Can these be frozen?
Just a recipe correction. You say to split the dough in 3 portions but to spread the rolled out dough with 1/2 the filling.
