I spent many a day tweaking this waffle recipe until I got it to taste 99.9% like the ones they serve at the Soramelo café in Machane Yehuda. It’s the closest thing to eating right there in Soramelo near the blue door.
3/4 cup Glicks Flour
1/4 cup Gefen Cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 tablespoon sugar
1/2 cup whole milk
1/4 cup sour cream
1/3 cup vegetable or lightly flavored oil
1 large egg
1 teaspoon Gefen Vanilla Extract
silan syrup, such as Heaven & Earth Date Syrup

Mix together the flour, cornstarch, baking powder, baking soda, and salt in one bowl.
Mix the sugar, milk, sour cream, oil, egg, and vanilla in a second bowl.
Add the wet ingredients into the dry ingredients and mix well until you have a smooth batter.
Heat a waffle iron until super hot. Spray nonstick spray and then ladle a spoonful of batter onto the waffle griddle. Close and cook until done (see note).
Top with tahini, silan, whipped cream, and sliced bananas.

Do I have to add have sour cream? will it help with the consistency? If not, what can I substitute?
