An easy recipe for a chilled rice salad with shredded beets and a light mayo dressing.
2 cups cooked rice
2 pounds Gefen Organic Beets, grated
2 tablespoons scallions, chopped
1/3 cup oil
2 tablespoons Gefen Lemon Juice
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup Gefen Mayonnaise
Mix first seven ingredients and refrigerate.
Prior to serving, add mayonnaise, mixing well.
Serve chilled.
