London Broil Salad with Creamy Garlic Balsamic Dressing

When my sister-in-law was newly married, she prepared a London broil and asked my brother-in-law to grill it. When he saw her slicing it for a salad, he joked that she was turning his precious meat into rabbit food. But once he tasted it, he realized it was worth it!

Directions

Prepare the London Broil

1. Rub London broil well with salt and pepper. Pan-fry on medium-high heat for about five minutes per side. Set aside to cool.

Prepare the Vegetables

1. Place dressing ingredients in a jar and shake well. Keep in the refrigerator until ready to serve.

Notes:

This can be prepared a few days in advance.

To Assemble

1. Slice the London broil. Place vegetables in a bowl and add sliced London broil. Combine dressing ingredients and drizzle over the salad.

Notes:

You can serve this salad on individual plates as an appetizer.
