Diets Matzo and egg, after being briefly fried, is cooked down until soft. Matzo farfel is a quick and easy weekday side dish for Passover. This version is parve, but you can substitute chicken broth for the water for a heightened savory taste.
4 Manischewitz Matzos, crushed
4 eggs, lightly beaten
1 and 1/2 teaspoons salt
3/4 teaspoon pepper
1/2 cup oil
3–4 cups boiling water
Combine matzos with eggs, salt and pepper.
Heat oil in skillet. Stir-fry matzos for five minutes, stirring frequently.
Add water and cook for 25 minutes or until water is absorbed.
